Grilled pineapple marinated in coconut liqueur and rum

  • Ingredients (serves 4):

    900 g pineapple (approx. 1)
    250 ml 33% cream
    50 g butter
    40 g (2 tbsp.) granulated sugar
    10 ml (2 tsp.) coconut liqueur
    10 ml (2 tsp.) rum
    1 vanilla pod

Instructions:

1. Use the pineapple slicer to make slices, pour sugar on top of each, brush with melted butter and put aside.
2. Blend cream with sugar in a dish, add rum, liqueur and whisk lightly. Then add vanilla and blend. Leave the whisked cream to cool.
3. Grill the pineapple slices for 2 to 3 minutes on each side.
4. Serve with the flavoured cream, pour pineapple juice on top and garnish with peppermint leaves.
