Plum tomatoes with anchovies and olives

  • Ingredients (serves 4):

    600 g (6) plum tomatoes
    60 g pickled black olives
    24 g (12) anchovies

  • For the dressing:

    30 ml (2 tbsp.) olive oil
    15 ml (1 tbsp.) red wine vinegar
    2 cloves garlic
    Parsley leaves
    Salt, ground black pepper

Instructions:

1. Cut washed tomatoes into slices and spread on a plate. Add anchovies and black olives.
2. Mince a clove of garlic in a dish. Gradually add olive oil while mixing constantly; season with vinegar, salt and pepper and mix well.
3. Coarsely chop parsley leaves, sprinkle tomatoes with the chopped parsley and pour the prepared dressing on top.
